Chilaquiles Mexican Eggs

Mexican style scrambled eggs with onions, green chiles, cheese, and crispy tortillas.
6 corn tortillas
3 tablespoons salad oil or butter
1/2 cup diced onions
1/4 cup chopped green chiles
1/2 teaspoon salt
1 cup shredded Jack or Cheddar cheese
red or green salsa
Cut the tortillas into wedges (traditional way) or strips 3/8-inch wide. Heat the oil or butter over medium heat. Add the tortillas (in batches if needed) and stir and turn until just barely crisp on both sides. Remove with a slotted spoon (keeping as much oil in the pan as possible) and place on paper towels to drain.
Add the onion to the remaining oil in the pan and saute until soft, stirring occasionally. Stir in the green chiles.
Combine the eggs and salt in a bowl and whisk until well beaten. Add the eggs to the skillet with the onion mixture. Cook stirring until eggs are partially set. Stir in the reserved fried tortillas.
Sprinkle with shredded cheese and continue cooking, stirring until eggs are cooked as you like.
Transfer to individual serving plates. Top each serving with salsa.
