2 eggs
1 cup milk
2 tablespoons vegetable oil
1 cup all-purpose flour
2 tablespoons chopped fresh mint
1/2 teaspoon salt
directions
Preheat the oven to 425 degrees F. Coat 6 muffin cups with nonstick cooking spray.
In a large bowl, combine all the ingredients, mixing with a spoon until just blended (a few lumps may remain).
Immediately pour into the muffin cups and bake for 30 to 35 minutes, or until golden and puffy. Serve immediately.
