It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).




Popovers are a type of light and airy bread that is made from eggs, milk, and flour. Whole wheat popovers are a healthier option as they are made with whole wheat flour instead of white flour.
3/4 cup all-purpose flour
1/4 cup whole wheat flour
1 cup low-fat milk
1/4 teaspoon salt
2 eggs, beaten
Preheat the oven to 450 degrees F. Grease the cups of a popover pan or use 6-ounce custard cups.
In a bowl, mix together by hand the all-purpose flour, whole wheat flour, milk, salt, and eggs until just mixed and no longer contains lumps. Do not overmix the batter. Pour the batter into the prepared cups, filling each about half full.
Place the pan in the oven and bake for 20 minutes. Do not open the oven door. Reduce the oven heat to 350 degrees F and continue to bake for 20 more minutes.
Immediately remove the pan from the oven and gently remove the popovers from the pan. Serve warm.

We liked that these had some whole wheat flour in them, and oddly, no butter or oil. They got a little too browned for us and didn't really "pop" like popovers should. Would have probably worked better to bake at 450F for 15 minutes instead of 20. The inside was slightly airy, but again, not as much as we would have liked since they didn't rise much. The flavor was good (could add more salt to the batter if eating plain) and the overall texture wasn't bad. Mostly just the cooking time seemed to be a problem for us. We'd make this again with a few minor adjustments.
