Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Blender Popovers

ingredients
3 large eggs
3 tablespoons melted butter, margarine or oil
1 1/2 cup milk
1/2 teaspoon salt
2 cloves garlic, smashed (optional)
1 1/2 cup all-purpose flour
directions
NOTE: Have all ingredients at room temperature. Heat oven to 425 degrees F.
In blender, add eggs, shortening, milk, salt, garlic and lastly flour. Blend all well. Consistency should be like heavy cream.
Grease well muffin tins or popover tins. Heat empty tins in oven a few minutes. Remove tins from oven and fill cups 3/4 full. Return to oven and bake popovers 20 to 30 minutes on middle oven shelf. Popovers should be puffed and golden.
Serve immediately as all popovers will deflate when cooling. Timing is important when you serve these.
