ingredients
2 eggs
1 cup milk
1 cup flour
1 teaspoon salt
2 tablespoons butter or margarine

directions
In a blender or medium size bowl, mix eggs, milk, flour and salt until smooth. Refrigerate batter until ready to use or up to 2 days.
Before serving, preheat oven to 425. Grease 2 1/2" muffing cups. Place 1/2 t. butter or margarine into each cup and heat in oven until butter sizzles. Pour batter into cups filling each 1/2 to 2/3 full.
Bake 25 to 30 minutes or until popovers are puffed and brown. Do not open oven door to peek at popovers. Serve at once with butter.
NOTE: A food processor doesn't beat in enough air for the desired lightness, so use your blender or mixer.
