2 3/4 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup brown sugar
2/3 cup sugar
1 tablespoon grated orange zest
2 cups grated coconut
1/2 cup fresh orange juice
1 large egg, well beaten
2/3 cup evaporated milk
1 teaspoon vanilla extract
1/2 cup butter, melted and cooled
directions
Sift together the flour, baking powder and salt. Mix in the sugar, coconut, orange zest, orange juice, egg, milk, vanilla, and butter, mixing lightly but well.
Place dough in a greased 9- x 5-inch loaf pan. Bake in a preheated 350 degrees F oven until toothpick inserted in center comes out clean, usually about 55 to 65 minutes.
Let cool a little in the pan, then turn out on cake rack.
