Cake

1 package (2 layer size) white cake mix
1 1/3 cup chopped seedless watermelon
1 package (4 serving size) fruit gelatin powder (watermelon or strawberry flavor)
3 egg whites
1 tablespoon vegetable oil

Icing

1/4 cup watermelon juice (see tips section)
1/2 cup butter, softened
2 cups powdered sugar
6 ounces cream cheese, softened

directions

Preheat the oven to 350 degrees F. Grease and flour a Bundt pan.

Combine the cake mix, watermelon, gelatin powder, egg whites, and oil in a large mixing bowl. Beat on low speed with an electric mixer for 1 minute. Increase the speed to medium and beat until the mixture is smooth, scraping down the sides of the bowl as needed.

Pour the batter into the greased Bundt pan. Place the pan in the oven and bake at 350 degrees F for 35 minutes or until a toothpick inserted near the center comes out clean.

Remove the cake from the oven and let cool in the pan for 5 minutes then invert the pan onto a wire rack and remove the pan. Let the cake cool completely.

When the cake is cool, combine the cream cheese and butter in a mixing bowl and beat on medium speed with an electric mixer until combined. With the mixer running on low speed, slowly add the powdered sugar until incorporated. Add the watermelon juice and beat for 30 seconds on low then turn the mixer to medium and beat until fluffy.

Frost the cooled cake with the watermelon icing. Store the cake in an airtight container in the refrigerator.
