Holiday Mincemeat-Stuffed Apples

ingredients
8 medium Granny Smith apples
4 tablespoons butter or margarine
1 tablespoon rum extract
8 tablespoons mincemeat
directions
Wash and core apples but do not peel. Place apples in an ovenproof dish. Fill cavities with butter, rum extract and mincemeat.
Bake at 350 degrees F for 25 minutes or until apples are tender. Serve with baked pork loin, lamb or baked ham.
