1/2 cup light corn syrup
1/2 cup sugar
1/4 cup orange marmalade
1/4 cup butter or margarine
6 baking apples
1/2 cup light brown sugar, firmly packed
3 tablespoons raisins
1/2 teaspoon cinnamon
1/4 cup brandy
vanilla ice cream
Preheat oven to 375 degrees F.
In a small saucepan, combine corn syrup, sugar, marmalade and butter. Cook over medium heat, stirring, until sugar is dissolved. Pour into a 12 x 8 x 2 inch baking dish.
Wash and core apples. Pare only at top, about 1 inch down.
In a small bowl, combine brown sugar, raisins and cinnamon. Fill centers of apples with raisin mixture. Place in syrup, pared side down. Bake covered for 30 minutes.
After 30 minutes, turn apples pared side up. Baste with syrup (save some syrup for basting during cook time). Bake, uncovered for 15 minutes until apples are done or soft. Baste apples occasionally.
Place apples and syrup in heated serving dish. Bring to table.
Heat brandy in small saucepan until bubbles form around edge of pan. Ignite with match. Pour over apples. Serve with ice cream.
