8 popsicle sticks
8 tart Granny Smith apples
3/4 cup heavy cream
3/4 cup light corn syrup
1 stick unsalted butter
1 cup sugar
1/4 cup heavy cream
1 teaspoon vanilla extract
48 ounces dark chocolate
1 cup chopped almonds
directions
Insert a popsicle stick into the stem end of washed apples. Heat first measure of heavy cream, corn syrup, butter and sugar until a candy thermometer reads 280 degrees F. Remove the pot from the heat. Stir in remaining heavy cream and vanilla.
Dip each apple into the caramel, coating evenly. Place on a waxed paper-lined cookie sheet and let cool. Melt chocolate and spread chopped almonds on a plate. Dip the apples in the chocolate, then roll in the nuts. Cool.
