Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

1-2 hrs
ingredients
8 cups sliced apples (Granny Smith apples work well)
1/2 teaspoon vanilla extract
1 cup brown sugar
1 cup white sugar
1 cup flour
3/4 cup soft butter
1 cup quick-cooking oats
1 cup regular oats
1 cup English walnuts
1/2 teaspoon salt
caramel (melted)
directions
Spray a 9 by 13 inch pan well and place apples in the bottom. Mix the other ingredients well until crumbly and place on top of the apples.
Bake in center oven for 50 to 60 minutes at 350 degrees F, or until the crisp starts to bubble/steam in the center.
Place loose foil over the top for the last 20 minutes if it's too brown. Top with as much melted caramel as you want.
