ingredients
1/4 cup olive oil
1 cup finely chopped onions
1 teaspoon minced garlic
2 1/2 cups shredded zucchini or yellow squash (or mixed)
6 medium eggs
1 1/2 cup plain bread crumbs
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 cup chopped fresh parsley
OR
1/4 cup dried parsley
2 cups grated cheese
1/2 cup Parmesan or Romano cheese
1/4 cup sesame seeds (optional)
directions
Preheat oven to 325 degrees F.
In a skillet, saute the onions in olive oil. Add garlic and squash and saute for 3 minutes.
In a bowl, add eggs, bread crumbs, pepper, salt, parsley, grated cheese, cooked squash.
Grease a 9" x 13" pan with olive oil. Pour squash mixture in pan. Sprinkle top with Parmesan cheese, then sprinkle sesame seeds on top.
Bake for 30 minutes. Cool, then cut into squares.
