This simple side dish can be made with zucchini, summer squash, or other squash. Whichever you choose, simply cook until tender and then add to the remaining ingredients.
4 tablespoons butter
2 pounds squash, sliced
1 1/2 cup shredded cheddar cheese
1 cup sour cream
1/4 cup chopped onion
1/3 cup freshly grated Parmesan cheese
1 teaspoon dried Italian seasoning, optional
Preheat the oven to 350 degrees F.
Heat a skillet over medium-high heat. Add the butter. When butter is melted, add the squash and cook, stirring occasionally, until tender.
Combine the squash, butter from the pan, cheddar cheese, sour cream, onion, Parmesan, and Italian seasoning. Pour the mixture into a baking dish and bake at 350 degrees F for 20-30 minutes or until the cheese is golden brown and bubbly.
Serve the squash au gratin hot.

Delicious! I sauteed the onion a little then added summer squash and zucchini with the Italian seasoning. The eat o f the recipe I followed along. I do a zucchini pie and that is how I add the same ingredients.

SOOOOO good! Made it as written (except I forgot Italian seasoning) and absolutely loved it. Was inspired to try again with cabbage instead of squash and cream cheese instead of sour cream because that's what I had. It was almost as good. Highly recommended! Really satisfies the au gratin potatoes craving.

Why does the recipe call for onion, but never mentions it in the directions?
It is mentioned - first sentence of the last paragraph where you are mixing the ingredients together.

My husband was sure this was from a restaurant. Delicious!!! Even my picky 2 yr old loved it!! I forgot the parmesan cheese the first time I made it but it was great without it. Enjoy!
