1 medium spaghetti squash
2 tablespoons chopped fresh basil
1 tablespoon butter
2 cloves garlic, minced
1/8 teaspoon salt
shredded parmesan, optional
Preheat the oven to 350 degrees F.
Place the spaghetti squash in a baking dish. Prick the skin with a knife. Place the baking dish in the oven and bake at 350 degrees F for 1 hour and 15 minutes or until it is fork tender.
Remove the squash from the oven and let sit until just cool enough to handle. Cut the squash in half. Scoop out the seeds with a large spoon. Shred the flesh with a fork and place in a bowl.
Combine the basil, butter, garlic, and salt in a bowl and mix well. Stir the mixture into the hot spaghetti squash and mix until coated.
Serve immediately, topped with shredded Parmesan, if desired.
