Fried zucchini: a comical coincidence of healthy and unhealthy! Combine baking mix, egg and parmesan to make a batter for frying up the sliced squash.
1 1/2 cup Bisquick or Jiffy baking mix
1 egg, lightly beaten
1 teaspoon garlic salt
1 cup water
2 tablespoons finely grated Parmesan or Romano cheese
3 yellow or zucchini squash, sliced
Combine the baking mix, egg, garlic salt, water, and cheese and whisk well to mix.
Heat oil, as needed, in a deep skillet or deep fryer to 360 degrees F.
Dip the squash slices into the batter, letting excess drip off. Add the squash to the hot oil and cook, turning as needed, until crispy and golden brown.
Remove the squash from the oil with a slotted spoon and let drain on paper toweling. Serve hot.

Love these! Also, layer in casserole dish, sprinkle with grated cheese, add tomato sauce, continue to layer till dish is filled, add shredded mozzarella and Parmesan over the top, and bake at 350 degrees, approx 30 - 45 minutes or till bubbly and browned on top. Enjoy!

Quick and easy. Fried eggplant strips, mushrooms and onion rings. Browned quickly. Omitted cheese from batter, used Bisquick. Delicious!

We make this every year when our garden is overrun by zucchini. I use a deep fryer and then serve these with either a ranch dressing for dipping or a buttermilk dressing.
