ingredients
2 1/2 pounds yellow squash, sliced
2 tablespoons butter
1 egg, beaten
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon black pepper
1 small onion, chopped
1 cup cornbread crumbs
1/2 cup cheddar cheese, grated
directions
Place the squash in a saucepan and cover with water. Cook until just tender over medium-high heat; drain. Combine squash and remaining ingredients, except cheese.
Place in a greased baking dish and sprinkle with cheese. Bake at 350 degrees F for 25 minutes.

Drain the squash really well after cooking it or I think the dish will get a little watery. I didn't have cheddar cheese so I used a Mexican blend and it was very good. Would be good with monterey jack cheese too.
