Savory comfort food doesn't have to be unhealthy. Creole shrimp and chicken definitely qualifies as comfort food, but this well-spiced bowl manages to do it without the mounds of butter and cheese that comfort favorites often resort to.

1 cup chopped green bell pepper
3/4 cup chopped onion
1 teaspoon vegetable oil
2 cups peeled diced tomatoes
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon red pepper
1/8 teaspoon black pepper
2 1/2 cups uncooked, cleaned small fresh shrimp
1 cup chopped, cooked chicken
Saute green pepper and onion in oil in a large skillet until vegetables are tender.
Stir in tomatoes, salt, garlic powder, chili powder, red pepper, and pepper. Bring to a boil. Reduce heat, and simmer, uncovered, 20 to 30 minutes or until mixture thickens.
Stir in shrimp and chicken (mixture will thin when shrimp is added). Return to a boil; reduce heat, and cook 1 to 2 minutes or until shrimp turn pink.

This recipe was good. The directions say to bring the mixture to a boil but there really isn't much liquid to boil unless you're using canned (undrained) tomatoes, but the recipe doesn't specify that. It's a nice lowfat recipe with lots of flavor (loved all the spices).
