Chicken and broccoli are baked with a rich mushroom sauce and topped with a layer of crunchy cornbread croutons
1 bunch broccoli, chopped
3 cooked boneless, skinless chicken breasts, cubed
1 cup mayonnaise
1 can cream of mushroom soup, undiluted
1 tablespoon garlic powder
1/4 cup butter, melted
1 package cornbread stuffing mix, unprepared
Preheat oven to 350 degrees F.
Place the broccoli in a steamer or a steamer insert in a pan of water. Cook until it just turns bright green (crisp tender).
Place the broccoli in a casserole dish in an even layer. Place the cubed chicken on top of the broccoli.
In a bowl, combine the mayonnaise, cream of mushroom soup, and garlic powder until well blended. Spread the mayo mixture evenly over the chicken.
In a large bowl, toss the melted butter with the cornbread stuffing mix and the contents of the stuffing seasoning package (if included) until the cornbread is evenly coated in the butter.
Evenly spread the buttered stuffing mix over the top of the casserole.
Bake, uncovered, at 350 degrees F for 30 minutes or until bubbly in the center.

I used cooked frozen broccoli and regular stuffing mix. Very good. It wasn't too salty either like you get with some recipes that use a lot of mixes

This turned out REALLY good - perfectly seasoned and texture. The stuffing mix sprinkled on top of the chicken and mayo mix gave it a crusty texture that was just simply delicious. It was extremely easy to make. I used a chicken broccoli rice dish from Liption and added extra broccoli as side dishes. RECOMMENDED!
