All-Fruit Mincemeat

ingredients
4 cups chopped unpeeled apples
2 cups raisins, chopped
1 cup snipped dried apricots
1 can (6 ounce size) frozen apple juice concentrate, thawed
3/4 cup water
1/4 cup honey
1 teaspoon ground allspice
1/2 teaspoon salt
2 tablespoons brandy
directions
In a 4 1/2-quart Dutch oven stir together the apples, raisins, apricots, apple juice concentrate, water, honey, allspice, and salt. Bring to boiling, reduce heat. Cover and simmer for 50 minutes, stirring occasionally. Uncover and simmer for 10 to 15 minutes more or till liquid has nearly evaporated, stirring occasionally. Stir in the brandy. Cool. Stir, covered, in the refrigerator.

This was a wonderfull recipe and fully enjoyed by every member of my family. The only thing I will change in the future is to neglect the brandy in the recipe as none of us are drinkers and we found that after a while it took away our enjoyment of it, but it is a wonderful recipe for any and all. Easy to make. Easy to prepare. And fun to eat.

This is a great recipe for mincemeat - so easy and contains no suet so I can safely offer it to my vegetarian relatives. It tastes better than the most expensive store-bought product. I will definitely be making this again. Thanks
