A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Pink Vodka Sauce for Penne

ingredients
1 medium onion, chopped
2 tablespoons olive oil
1 cup heavy whipping cream
1/2 cup vodka
28 ounces can crushed/pureed tomatoes
1/2 teaspoon crushed red pepper flakes
salt and pepper, to taste
Parmigiano cheese and chives for garnish
directions
In a large saucepan heat olive oil add onions and saute until translucent add tomatoes, vodka, crushed pepper and mushrooms and render down sauce (about 20 minutes) add cream and render again for about 20 minutes serve over choice of pasta and garnish with Parmesan. cheese and chopped chives.
