Creamy Tomato And Basil Sauce For Pasta

ingredients
6 Roma tomatoes, quartered
4 tablespoons chopped fresh basil
1/2 teaspoon minced garlic
3 tablespoons heavy cream
salt and pepper
1/4 cup freshly grated Parmesan cheese
fresh parsley, minced, for garnish
Roma tomatoes, chopped, for garnish
directions
Add the tomatoes and basil to a blender and puree until smooth.
Add the puree to a saucepan over medium heat. Bring to a low simmer.
Add the garlic, cream, and salt and pepper to taste. Heat through and then pour over fresh-cooked pasta. Sprinkle with Parmesan, parsley, and garnish with chopped tomatoes.

I made this last night to go with brown rice pasta and chicken. I used garden fresh tomatoes and basil, fresh cream, but not fresh garlic (jarred/pre-chopped kind). It was simple to make. The taste was very earthy. I think one thing I'd make sure to do is barely puree the tomatoes with some of the basil and then add the rest of the basil at the end of cooking time. While my basil was super fresh, it was hard to taste its flavor in the sauce. After adding salt and pepper (not too much) and a pinch of cane sugar, I still felt like the sauce was "missing something." However, if you like simple ingredient taste, this is a decent starter recipe.
