This soup is the perfect comfort food. It's hearty, filling, and full of flavor. Beef, tomatoes, corn, and beans get souped up with Ranch and taco seasoning mixes in the slow cooker.
1 pound ground beef
1 large onion, chopped
1 can (15 ounce size) stewed tomatoes
1 can (15 ounce size) pinto beans, drained and rinsed
1 envelope dry ranch salad dressing mix
1 envelope taco seasoning mix
1 can (15 ounce size) ranch-style beans, undrained
1 can (15 ounce size) Ro-tel tomatoes, undrained
1 can (15 ounce size) creamed corn, undrained
2 tablespoons chopped fresh cilantro
Heat a skillet over medium heat. Add the ground beef and onion and cook, stirring, until the beef is browned. Drain off any excess grease.
Add the beef and onion to the crock pot. Stir in the remaining ingredients. Add water as desired to make it a soupier consistency (remember, the crock pot will create additional liquid while it cooks).
Cover the crock pot and cook on low heat for 5-6 hours or until heated through. Stir well before serving.
