Pepper-Seared Tuna

ingredients
1 (4-6 ounce size) tuna steak
1 cup diced mangoes
1 tablespoon red pepper
1 tablespoon red onion
1 tablespoon scallion
1 tablespoon jalapeno (optional)
1 teaspoon cilantro
1 teaspoon fresh parsley
2 tablespoons rice vinegar
1 tablespoon olive oil
salt and pepper, to taste
mixed or favorite salad greens
julienned green apples
directions
Dredge your tuna steak in salt and cracked pepper seasoning, have skillet very hot with enough olive oil to coat. Cook tuna about 2 minutes on each side (to med. rare) Place salad greens on plate and garnish with apples, carrots, tomatoes. Combine all diced ingredients and vinegar and olive oil in separate bowl. Put it together!
The salsa is enough to make three servings and can be made 24 hours in advance.
