Salmon in Phyllo Pastry with Mango Curry Sauce

ingredients
4 fresh salmon fillets
16 sheets phyllo pastry
1 stick melted butter or margarine
Mango Curry Sauce
1 large ripe mango, coarse chopped
1/2 cup mayonnaise, more if desired
2 teaspoons curry powder, or to taste
1/2 cup toasted chopped walnuts (optional)
directions
Make the mango curry sauce by combining ingredients, then chill well.
Salt and pepper the salmon pieces.
Lay 2 sheets of phyllo on flat surface and brush with melted butter. Add 2 more sheets and brush with melted butter. Place 1/4 of mango mixture in middle of phyllo several inches up from bottom edge. Place a salmon piece on top.
Fold (roll) phyllo over salmon and tuck under edges. Repeat for 3 more servings. Place salmon pastries into a buttered baking pan and brush tops of pastry with more melted butter.
Bake at 400 degrees F for about 25 minutes or until pastry is golden.

This recipe is incredible! Working with phylo dough is tricky but everything worked out perfectly. I considered subbing pineapple for mango because I've never been a huge fan but the curry powder changed the flavor to where I really enjoyed it. Might still try with pineapple too!
