Tomato-cream pasta sauce goes great with seafood such as scallops. You can use bay scallops instead of sea scallops, just reduce the cooking time by half.
2 teaspoons olive oil
2 cloves garlic, minced
1 cup finely diced tomatoes
1 1/2 cup evaporated skim milk
1 teaspoon dried marjoram
salt and pepper, to taste
3/4 pound sea scallops
6 cups cooked angel hair pasta
Heat the oil in a skillet over medium-high heat. Add the garlic and cook, stirring constantly, for 30 seconds. Add the tomato and cook, stirring frequently, for 2 minutes.
Add the evaporated milk and cook, stirring constantly, until the sauce starts to thicken.
Add the marjoram, salt, pepper, and scallops. Cook, stirring occasionally, until the scallops turn opaque (about 2 minutes).
Toss the tomato seafood cream sauce with the angel hair pasta and serve immediately.

This was alright as a throw-together pasta dish. A little on the bland side. I always love scallops, but you've got to watch the cook time so they don't turn to rubber. To save time, I used canned diced tomatoes instead of seeding and dicing a fresh one.
Fresh tomatoes add a lot more flavor. Probably needed some additional seasoning to counter the canned flavor.

I used whole wheat pasta - subbed 1 cup of tomatoes for 2 cups. added some onions when cooking the garlic. also added mushrooms with tomatoes. when i used the can of evaporated milk, i also used 3 tsp's of wondra flour (used for making sauce) and added 1/2 lb shrimp in addition to the scallops. once the sauce was finished but hot, i added a few handfuls of spinach for added nutrients. i may as well have re-written the recipe but it was low-fat, creamy and DELICIOUS!!! even my 4 year old freaked out!
perhaps you used sweetened condensed milk instead of evaporated milk

There is absolutely nothing sweet in this recipe, so it must be some ingredient you used that isn't exactly what is called for. And the fact that your guests liked it sounds like maybe it's just your tastebuds that are off. I have tried this recipe and it is GOOD! You can use shrimp or scallops (or like the other review sausage - which I haven't tried but it sounds good too)

Awful. My guest liked it, but I will never make it again. Perhaps it was error on my part, but it was very very sweet. I think that the cook time was off as well because it was not creamy by instructed serve time.

We made this but instead of scallops added at the end, we used browned Italian sausage. It was fabulous.
