2 large eggs
2 cups milk
1 1/2 tablespoon vanilla extract
1 cup sugar
1/4 teaspoon nutmeg
1/2 teaspoon grated orange peel
3 medium sweet potatoes, peeled and grated
6 tablespoons unsalted butter, melted

Preheat the oven to 350 degrees F.
Beat the eggs in a large bowl. Then beat in remaining ingredients and pour into a buttered 2 quart souffle or baking dish.
Bake until firm and golden brown, about 2 hours. Let stand for 20 minutes before serving; this allows the flavor to intensify.
