A side of sweet potatoes is one of the best ways to add a pop of color and flavor into a meal, regardless of the season. Glazing these planks with brown sugar and rum brings out their flavor and makes them a great accompaniment for a savory chicken or pork skillet.
2 sweet potatoes
2 cloves garlic, peeled
2 tablespoons whole butter
1/4 cup brown sugar
1/4 cup dark rum
kosher salt to taste
fresh ground black pepper to taste
Peel and cut the sweet potatoes into planks, place in water for later use.
Melt the butter on medium heat, add the sliced garlic and brown sugar, and stir until all combined. Add the rum and cook for another 3-5 minutes on low.
Toss the sweet potato planks in the mixture and place on a sheet tray. Place the sheet tray in oven that has been preheated to 375 degrees F. Roast in oven for 15-20 minutes or until done, depending on thickness of planks.
