1 1/2 pound sweet potato, peeled and sliced 1/2-inch thick
1 pound tart apple, peeled and sliced 1/2-inch thick
1/2 cup apple cider
1/4 cup brown sugar
2 tablespoons cold butter, cut in bits
Preheat the oven to 375 degrees F. Grease a rectangular glass baking dish.
Place the sweet potato and apple slices in alternating rows in the baking dish. Pour the apple cider into the baking dish then sprinkle the sweet potatoes and apples evenly with the brown sugar and distribute the butter over all.
Cover the baking dish with aluminum foil and bake for 1 hour or until the sweet potatoes are tender when pierced with a fork.
Serve hot.

Easy and delicious. Presentation attractive. Sweet but not overpowering. I topped it with a bit more brown sugar and butter that melted before serving. I served for holiday and it was a hit!
