Roasted Sweet Potato Cubes

ingredients
nonstick cooking spray
1 pound sweet potatoes, peeled and cut into 3/4 inch cubes
2 teaspoons canola oil
2 tablespoons dark brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
directions
Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil. Lightly spray foil with cooking spray.
Put sweet potatoes on foil. Drizzle with oil. Toss gently to coat. Arrange in a single layer. Sprinkle with remaining ingredients.
Bake for 15 minutes. Stir. Bake for 10 minutes or until very tender when pierced with a fork.
