Sweet Potato, Carrot, and Apple Gratin

ingredients
4 cups water
4 cups cubed peeled sweet potato (1/2-inch cubes)
2 cups thinly sliced carrot
1 1/2 cup diced peeled Granny Smith apple
1/3 cup orange juice
1/4 cup dried cranberries
2 tablespoons brown sugar
1 teaspoon grated peeled fresh ginger
1/4 teaspoon salt
1/4 teaspoon black pepper
non-stick cooking spray
3/4 cup shredded Fontina or Cheddar cheese
directions
Preheat oven to 375 degrees F.
Combine first 3 ingredients in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 4 minutes or until vegetables are tender. Drain well.
Combine sweet potato mixture, apple, and next 6 ingredients (apple through pepper) in a large bowl; toss gently. Spoon into a gratin dish coated with cooking spray; bake at 375 degrees F for 25 minutes.
Sprinkle with cheese; bake an additional 10 minutes or until cheese is golden brown.
