1 package (16 ounce size) orzo pasta
1 can (16 ounce size) diced tomatoes
1 can (6 ounce size) tomato paste
1 container (32 ounce size) beef broth
1 pound cubed leg of lamb or sirloin beef
8 cloves garlic, chopped
1 cup minced sweet onion
2 tablespoons extra virgin olive oil
2 tablespoons dried oregano
5 bay leaves
salt to taste (optional)
directions
In the bottom of a brasier pan or a Dutch oven, saute garlic and onion in the extra virgin olive oil. Add the bay leaf, oregano, diced tomatoes, tomato paste and beef broth. Simmer over medium heat for 30 minutes.
Add the orzo and the cubed meat and simmer an additional 30 minutes. Remove the bay leaves.
Serve with grated Parmesan cheese and enjoy this savory and delicious Greek dish.
