Slow Cooker Ground Beef And Mashed Potato Casserole

This yummy dish is sort of like a slow cooked shepherd's pie. It has a ground beef and vegetable base that is topped with a creamy mashed potato layer. You can use whatever kind of frozen vegetables you like in this recipe - and no need to thaw them before adding to the ground beef mixture.

ingredients

2 pounds lean ground beef
1 can (8 ounce size) tomato sauce
1 small onion, chopped
2 cloves garlic, minced
1 package (10 ounce size) frozen green beans, corn, or mixed vegetables
1 teaspoon salt
1 teaspoon black pepper
2 cups dry instant mashed potato flakes
1 1/2 cup sour cream
2/3 cup water
1 1/2 cup shredded Cheddar cheese

directions

Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until no longer pink. Drain off any excess grease.

Add the tomato sauce, onion, garlic, vegetables, salt and pepper to the beef. Cook, stirring constantly, for 2-3 minutes. Transfer the ground beef and vegetables to the crock pot.

In a bowl, stir together the dry potato flakes, sour cream, and water until smooth. Spread the potatoes over the ground beef in the crock pot.

Cover the crock pot and cook on low heat for 3-4 hours or high heat for 2-3 hours. Sprinkle with the cheese during the last 30 minutes of cooking time. Serve hot.

    I had to add more water for the potatoes. End product was great. Guest loved it.

    I added some italian seasoning to the ground beef mixture and used what I'd say is a medium onion. I used frozen peas because that's what I had. It was quite good and VERY filling. I didn't think the mashed potatoes would cook properly but they did. They were very dense and rich from the sour cream and the consistency went well with the meat mixture.
