Slow Cooker White Chili With Hominy, Black-Eyed Peas, White Beans and Corn

A hearty crock pot chili made with hominy, black eyed peas, great northern beans, white corn, chicken or turkey, green chiles, lots of seasonings, and topped with grated jack cheese.

1 large onion, chopped
1 whole red bell pepper, chopped
3 cloves garlic, minced
2 tablespoons olive oil
1 cup cooked chicken or turkey, cut in bite-sized pieces
9 ounces green chiles, chopped
2 tablespoons cumin
2 teaspoons oregano
1/4 teaspoon chili powder
1/4 teaspoon hot pepper sauce
1/4 teaspoon white pepper
15 ounces chicken broth
1 cup cooking sherry
1 can (15 ounce size) white hominy, drained
1 can (15 ounce size) black-eyed peas, drained
1 can (15 ounce size) great northern beans, drained
2 cans (11 ounce size) white corn, drained
4 tablespoons fresh cilantro or parsley, chopped
grated jack cheese (optional)

directions

In large pot, saute onion, garlic and red pepper in olive oil until translucent.

Add poultry, chili and seasonings (except for fresh cilantro/parsley); saute a few more moments. Mash white northern beans in a food processor with chicken broth. Transfer mixture to pot and add sherry, drained hominy, drained corn, and drained black-eyed peas. Stir. Simmer for about an hour, stirring occasionally, or transfer to crockpot and simmer for 8 hours on low setting.

Add parsley/cilantro, simmer 5 minutes. Adjust seasonings to taste. Serve with grated cheese garnish.

cook's notes

Can also use de-boned, uncooked chicken-- cut in bite-sized pieces and saute with step 1. I generally end up making my own chicken broth from 2 breasts the night before, and using the homemade broth and that meat for the chili. Good, strong homemade chicken broth definitely makes a difference!

    I prefer white chili to the red kind so I've tried more than a few versions. This one is incredible! Thank you so much for the great recipe. I was able to find white corn in my store but I'm sure regular yellow corn would be fine in it.

    I am credited as being the submitter of this recipe, but am not the author. I know I found it on the internet a few years back. I think it was from a young lady somewhere in Colorado. White corn is not always easy to find. If you live in an area that has a MEIJER store, they sell it in a 15.25 oz. can size. I have also found canned corn that is a mix of yellow and white corn. I personally don't make my own chicken broth. As a bachelor I just use commercially available chicken broth. This recipe has been a favorate for potlucks. Tortilla chips go well with it.

    This recipe takes a little more work than others, with processing the beans and chicken broth, but the results are worth the effort. this makes the chili less soup-like. could sub ground pork or sausage for chicken. i couldn't find white corn (which i find odd...), so i used frozen yellow corn and it was still great.
