White Bean Chicken Chili Recipe

Serves/Makes: 8
Ingredients:
2 tablespoons olive oil
8 boneless, skinless chicken breasts, cut into cubes
2 onions, chopped
2 1/2 cups chicken stock
1 teaspoon dried oregano
1 teaspoon dried cilantro
1/4 teaspoon cayenne pepper
2 teaspoons ground cumin
1 can diced chiles
1 jalapeño pepper, diced with seeds and stem removed
2 cans cannellini beans, rinsed and drained
5 green onions, chopped
1/4 pound shredded Monterey Jack cheese
Sour cream
Directions:
Heat olive oil in a large pot over medium heat. Add chicken and onions to pot and sauté for 8 minutes. (Note: Cook until chicken is tender.)
Mix in chicken stock, oregano, cilantro, cayenne pepper, cumin, chiles, and jalapeño pepper. Reduce heat. Simmer for 15 to 20 minutes. Add cannellini beans. Simmer for 10 minutes. Garnish with green onions, shredded cheese, and sour cream.
