This slow cooked chicken chili gets a little kick of heat from the chipotle chili powder.

ingredients
1/2 pound chopped cooked chicken breast meat 1 teaspoon onion powder 4 cups chicken broth 1 teaspoon ground cumin 1 teaspoon dried oregano 1 teaspoon dried chipotle chili powder 2 cans (15 ounce size) cannellini beans, rinsed and drained 3 tablespoons fresh squeezed lime juice 1/4 cup fresh cilantro, chopped
directions
Cut the chicken into bite-sized pieces if necessary.
Add the chicken and beans to the crock pot. Sprinkle the onion powder, cumin, oregano, and chipotle chili powder over the chicken. Pour the broth over all and drizzle with the lime juice.
Cover, cook on low for 4-6 hours.
To serve, top individual portions with chopped cilantro.

Loved it! I was afraid using cooked chicken would get dried out but it was quite good and tender.

Not bad but not overly spicy either. I'd maybe add some chipotle en adobo to bring out the chipotle flavor more.
