Easy Halloween Peanut Butter Treats

ingredients
64 Ritz-style crackers
creamy peanut butter, as needed
2 bags (12 ounce size) white chocolate chips
2 tablespoons shortening
decorative icings, orange and yellow
green gumdrops, cut in half

Spread half the crackers with peanut butter on one side. Top with another cracker to make a sandwich and set aside.
Melt the white chocolate with the shortening in a double boiler over low heat, stirring constantly, until smooth.
When the chocolate is melted, dip the sandwich cookies into the white chocolate, turning to coat them evenly (a candy fork works great for this). Set the cookies on waxed paper to set.
When the chocolate is set, decorate the cookies with pumpkin faces with the yellow and orange icing and gumdrop halves for the stem.
