1 teaspoon peppermint extract
9 cups confectioners' sugar
3/4 cup milk chocolate chips
3/4 cup semisweet chocolate chips
3 tablespoons shortening

In a large mixing bowl beat the cream cheese and extract until smooth. Gradually add confectioners' sugar, beating well. Shape into 1-inch balls.

Place on waxed paper-lined baking sheets. Flatten into patties. Cover and refrigerate for 1 hour or until chilled.

In a microwave melt chips and shortening; stir until smooth. Cool slightly.

I want to make these for a cookie exchange. Do these have to stay refrigerated. Yesterday I made a batch similar to these and when they were at room temp they were too mushy to pick up, although they were still amazing. How would you package them?
