Pineapple-Layered Choco Squares
INGREDIENTS:
1 cup crushed pineapple -- drained, reserve
2/3 cup pineapple juice reserved
1 package yellow cake mix
1 teaspoon cinnamon
1 teaspoon rum extract or vanilla
3 eggs
1 cup flaked coconut
3 ounces unsweetened chocolate, melted
1/2 cup chopped nuts
DIRECTIONS:
Oven at 350 degrees. Generously grease 13x9"" baking pan. In large mixer bowl, combine reserved juice, dry cake mix, cinnamon, extract and eggs. Beat well at low speed (batter will be thick). Measure 1 cup batter into small bowl. Stir in pineapple and coconut. to remaining batter, stir in chocolate and nuts. Spread 1/2 chocolate batter in prepared pan. Spread pineapple mixture over chocolate batter. Spoon remaining chocolate batter over pineapple mixture and spread. Bake for 30-40 minutes until toothpick inserted in center comes out clean. Cool completely. Cut into bars.
