1 cup shortening
2 cups white sugar
2 eggs
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup milk
Preheat oven to 350 degrees F. Lightly grease a 11x15 baking pan.
Combine the shortening and sugar in a large mixing bowl. Beat on medium-high speed with an electric mixer until the mixture is well creamed. Add the eggs, one at a time, with the mixer running, beating well after each addition.
Combine the flour, salt, and baking soda in another bowl. Add to the mixing bowl, with the mixer running, in 1 cup increments alternating with the milk.
Transfer the dough to the prepared pan and spread it evenly. Place in the oven and bake at 350 degrees F for 20 minutes or until just set in the middle. Sprinkle sugar on top while hot or let cool and frost as desired. Store the cookie squares in an airtight container.
