What's the mystery? Maybe it's that it took you so long to find this recipe--chopped pecans, coconut flakes and vanilla extract mixed into some very tasty bars. Whether or not they're delicious, though, is no mystery.

Crust
1 cup flour
1/2 cup brown sugar
1/2 cup butter or margarine, softened
Filling
2 eggs
1 cup brown sugar
2 tablespoons flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped pecans
1/2 cup flaked coconut
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F.
Crust: In a bowl, combine the flour and brown sugar. Add the butter and cut with a pastry blender until crumbly. Press the mixture into the bottom of a 9-inch square pan.
Place the pan in the oven and bake at 350 degrees F for 15 minutes or until lightly baked.
Meanwhile, add the eggs to a mixing bowl. Beat on medium speed with an electric mixer for 2 minutes. Add the brown sugar, flour, baking powder, and salt. Beat well, scraping down the sides as needed.
Stir in the pecans, coconut, and vanilla by hand. Mix well.
Transfer the mixture to the baked crust. Return the pan to the oven and bake at 350 degrees for 30 minutes or until set.
Let cool in the pan then cut into bars. Store the bars in an airtight container at room temperature.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This is a family favorite Christmas dessert. My mom would make them every year at Christmas. Yum Thanks for posting the recipe as I lost my momâs recipe.
