Almond-Cherry Scones

ingredients
2 cups flour, plus more as needed
2 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon salt
1/2 cup shortening or margarine
1/2 cup chopped maraschino cherries, reserving some of the juice from the jar
1 cup milk, cream, or buttermilk
1 teaspoon almond extract
1/2 cup chopped almonds
Icing
2 tablespoons reserved cherry juice, more if needed
1 cup powdered sugar

Preheat oven to 400 degrees F.
Combine the flour, baking powder, sugar, and salt in a mixing bowl. Add the shortening and cut in with a pastry blender or a fork. Mix until it forms coarse crumbs.
Stir in the cherries, milk, almond extract, and chopped almonds until mixed.
Place the scone dough on a lightly floured surface and gently knead into a ball. Add flour as needed if the dough is sticky.
Flatten the dough to a 1 1/2-inch thick circle. Cut into 6 wedges or cut out with a biscuit cutter. Place on a baking sheet. Place the baking sheet in the oven and bake at 400 degrees F for 15-20 minutes.
Remove the scones from the oven and let cool completely on a wire rack.
Combine the reserved cherry juice and powdered sugar until an icing is formed. Drizzle the scones with the icing.
Store the scones in an airtight container.
