Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

- #10028

ingredients
4 tablespoons butter, melted
1/4 teaspoon garlic salt
black pepper, to taste
1/4 cup chopped celery
6 boneless skinless chicken breast halves
1/2 pound fresh mushrooms, sliced
1/2 cup shredded Monterey jack cheese
2 3/4 ounces french fried onions
directions
Preheat the oven to 350 degrees F.
Combine the melted butter, garlic salt, black pepper, and chopped celery in a large baking dish. Add the chicken breasts and turn them to coat completely in the butter.
Cover the baking dish with foil and bake at 350 degrees F for 1 hour.
Remove the foil and evenly sprinkle the sliced onions around the chicken. Replace the foil and bake the chicken for 15 minutes more or until the chicken is almost cooked through.
Remove the foil again and top the chicken with the cheese and french fried onions. Bake for 5-7 minutes longer, uncovered, or until the cheese is melted.
Serve hot.

The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

I've made this multiple times and we love it! Thank you!

This is a very good recipe! It's cooked in stages so the mushrooms don't get overcooked which is one of my peeves about some casserole dishes.

If you are a beginner cook, definitely try this, it's super easy and tasty!!!! I made this last night for my hubby and 13 month old. They LOVED it! The chicken was perfect and I'm picky about how "done" my chicken is. I think I'll try pepper jack or mozarella cheese next time.
