Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

Low-country style chicken creole with the convenience of a slow cooker. Chicken thighs with classic Cajun veggies, hot sauce, and tomatoes all served over rice.

3 pounds skinless chicken thighs
1 cup diced celery
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
1 onion, diced
1 can (4 ounce size) sliced mushrooms
1 can (15 ounce size) diced tomatoes, drained
1 teaspoon garlic powder
1 teaspoon sugar
1 teaspoon Cajun seasoning
1/2 teaspoon paprika
salt and pepper, to taste
Louisiana hot sauce, to taste
4 servings cooked rice
Place the chicken pieces in the bottom of the crock pot.
In a large bowl, combine the remaining ingredients except the rice. Mix well then add to the crock pot.
Cover the crock pot and cook on high for 2-3 hours or on low for 4-5 hours or until the chicken is cooked through (use the low end of the cooking time for boneless chicken, the higher time for bone-in).
Serve the mixture over cooked rice.

Is chicken boneless and can you use skinless breast?
You can use bone-in or boneless. If you use chicken breasts then reduce the cook time a little.

I made this for a Mardi Gras party at work and it was a HIT!! No leftovers for the first time...and I work with all men!! I varied [slightly] the recommended amounts for quantity and taste and was able to serve over 10 people comfortably. I'll be making this again!!
