ingredients
2 teaspoons butter
4 boneless and skinless chicken breasts, halved
1 large red onion, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 cups spicy V-8 vegetable cocktail juice
1/2 teaspoon hot sauce
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon dried thyme
1 teaspoon garlic flakes
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
directions
Melt butter in a heavy nonstick skillet. Add chicken and brown quickly on both sides over high heat. Remove to a platter.
Add onion and bell peppers to skillet and cook over moderate heat until soft. Add V-8 Juice, hot sauce, and seasonings. Return chicken to pan. Simmer until sauce is thick.
Serve over yellow rice, with a side dish of refried beans with a little bit of fresh green onions on top.
