Chicken Dijon

ingredients
2 large chicken breasts
2 tablespoons lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon dried basil leaves, crushed
1/4 teaspoon garlic salt
1/8 teaspoon black pepper
dash paprika
directions
Remove skin and excess fat from chicken. Rinse chicken and pat dry. Pierce chicken with a fork.
Place chicken in a 9 x 9 x 2-inch microwavable dish. Sprinkle with lemon juice, turning chicken over to coat. Let stand for 20 to 30 minutes, turning once.
Arrange in dish with thickest portion toward outer edge and breast-side up. Spread mustard over chicken. Sprinkle with basil, garlic salt, pepper and paprika. Cover with waxed paper. Microwave at 100% power (700 watts) for 3 minutes. Rotate dish one-half turn. Reduce power and microwave at 50% power (350 watts) for 6 to 7 minutes or until no longer pink in thickest portion, rotating dish one-half turn after 3 minutes. Cover with foil and let stand for 5 minutes.
