ingredients
4 pounds whole chicken (broiler/fryer), cut into 8 pieces
1/2 cup olive oil, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons olive oil
10 sprigs fresh thyme
40 cloves garlic, peeled
salt and pepper

Preheat oven to 350 degrees F.
Season chicken with salt and pepper. Toss with a 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat.
Remove from heat, add oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hours.
Remove chicken from the oven and let rest for 5 to 10 minutes. Carve and serve.

I made this last night and the chicken turned out really dry. I think the baking time needs to be reduced. (I thought 1 1/2 hours seemed like a long time.) I'm going to try again but reduce the baking time by half or so, and maybe add some liquid. Also, I threw in some Spanish olives at the last minute and this was a nice touch.
