1 cup plain yogurt
2 teaspoons minced garlic
1 cup chopped onion
1 teaspoon coriander seeds
1 teaspoon ground cumin
2 teaspoons ground turmeric
1/2 teaspoon dried mint, crushed
4 chicken leg quarters
Combine all the ingredients except the chicken until mixed. Place the chicken in a zip-top plastic bag and add the marinade. Seal the bag and turn to coat the chicken thoroughly. Place in the refrigerator for 8-12 hours, turning the bag occasionally.
When ready to cook, preheat the oven to 400 degrees F.
Drain the marinade from the chicken and place the chicken in a baking dish or on a rimmed baking sheet. Bake at 400 degrees F for 35 minutes or until the chicken is done.
