Tarragon Coleslaw

Tarragon vinegar gives this coleslaw a splash of anise flavor. A little fresh minced tarragon can also be added if desired.

ingredients
3 pounds cabbage, core and outer leaves removed
1 cup mayonnaise
1/2 cup sugar
1/4 cup salad oil
1/4 cup tarragon vinegar
1 tablespoon dried onion flakes
directions
Finely shred the cabbage and place in a bowl.
In another bowl, stir together the mayonnaise, sugar, oil, vinegar, and onion. Mix well then pour over the cabbage. Toss the cabbage to coat it thoroughly in the mayonnaise mixture.
The coleslaw can be eaten immediately but it is best if it is covered and chilled for 1-3 hours before serving.
