It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Greek Slaw

ingredients
2 heads white cabbage
4 bell peppers (both red and green varieties)
4 cups yellow mustard
2 cups water
1 tablespoon salt (more if needed)
1 tablespoon white pepper
directions
Cut cabbage in half then remove center stem. Chop remainder into small pieces. Repeat process with seeded bell peppers (Do not use a grinder).
Using hands, mix mustard, water, salt and white pepper with cabbage and bell peppers. Refrigerate in a glass jar.
Slaw will keep for a long time. Serve on hamburgers.
