Buttermilk Brownies With Chocolate Frosting

Brownies
1 cup water
1/3 cup canola oil
2 cups all-purpose flour
2 cups sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 cup buttermilk
1 large egg white, well beaten
Frosting
6 tablespoons margarine
1/3 cup buttermilk
1/4 cup unsweetened cocoa powder
16 ounces confectioners' sugar
1/2 teaspoon vanilla extract

For Brownies: Preheat the oven to 450 degrees F.
Spray a 15- x 10- x 1-inch jellyroll pan with nonstick cooking spray. In a small saucepan, combine water and oil, then bring to a boil.
Meanwhile, in a mixing bowl, combine flour, sugar and cocoa powder. Add hot water and oil mixture, stirring until combined and smooth.
Stir baking soda into buttermilk and add to chocolate mixture along with egg white, stirring well. Pour batter into prepared pan and bake for 15 minutes.
For Frosting: In a small saucepan, combine margarine, buttermilk and cocoa powder. Bring to a boil. Add confectioners' sugar and vanilla extract and stir until smooth.
Spread frosting over warm brownies. Cool and cut into squares.
